Earl’s Rib Palace is BBQ rib chain in Oklahoma City, Oklahoma. The best word to describe the restaurant would be convenient.
Earl’s Rib Palace is located in the Bricktown. Bricktown is a little open air mall or plaza next to Downtown OKC. It’s one of OKC’s attraction cause there isn’t much to do in the small town. However, a visit to OKC would not be the same as a visit to New York, Los Angeles, Chicago or San Francisco. It’s an interesting town with its Midwest charm.
I stopped by for lunch since I couldn’t get a seat at KD’s. KD’s was the first choice, but the wait time was insane. However, Earl’s saved the day because it was right next door to KD’s. It’s an OKC “fast-food” chain without the heat lamps. The restaurant offers inside and outside seating. The service was quick and staff was pleasant. With all ribs, the restaurant offers an array of sauces with its BBQ.
I decided on the following items off their slow cooked Oklahoma BBQ menu:
- Briskets – It was a large slab of meat with the outside seared. The briskets were very tender and tore apart easily. However, it was really dry and there was no moisture in it at all. The natural beef juices was missing and it seemed like it was overcooked. The sauce didn’t help the briskets’ case and the briskets were lackluster briskets.
Briskets - Ribs – The ribs had gorgeous seared marks on it. However, like the briskets, it seemed a bit overcooked. The meat didn’t fall off the bone as I always imagined with Midwest BBQ. It was pretty flavorless, but the smokey flavors was all over it like a toddler’s hand on candy. There was no moisture in the ribs; it was overly dry with the sauces providing no assistance.

Overall, Earl’s Rib Palace briskets and ribs were okay. It wasn’t anything special and it’s not what I always imagine Midwest BBQ to taste. I expected a lot better and the only thing I enjoyed was the rib’s seared skin. Unfortunately, I don’t think I would be back next time I’m in town.
