Denver’s Divey Columbine Steak House & Lounge

Columbine Steak House & Lounge is a divey Denver steakhouse.  Well, you get what you paid for is the correct term for this steak house.

It’s a local dive steak house where all the locals flock to have a slab of beef.   I’ve been on numerous occasions in my life during the winter when I’m in town for my snowboarding trips. It’s located off of Federal Blvd and there’s a bar in the other room.  It’s usually my first meal when I land in Denver cause my friends love this place. Columbine Steak House Denver

After loading our gear into the rental, we head straight into town to grab a meal then pick up supplies for the four day weekend.  It’s about a 30 minute drive into town where the sun is out and snow covering the sidewalks.  It gets pretty cold in Denver so I usually throw on a sweatshirt while riding shot gun.  We arrive at Columbine Steak House then park in the available parking adjacent to the building. Columbine Steak House is nowhere near Ruth’s Chris and Mastro’s.  It’s definitely nowhere near CUT, Peter Lugar’s or Alexander’s.  It’s a rib eye steak for $20 in a town not know for it’s culinary achievements but for its liberal acceptance of recreational marijuana.  Well, at first, it sounds like a deal but the quality of the steak is mediocre at best.  However, the cliche of “you get what you pay for” comes to mind as I enjoy the steak.

Anyway, I’m a big fan of the rib eye cut due to it’s fat content and flavors.  It’s the only cut I usually eat at steakhouses.  Columbine’s rib eye comes with a baked potato and slices of garlic bread.  The steak lacks any marbling and it’s apparent when the slab of beef is thrown on the grill.  The steaks are low quality; it lacks any rich or buttery texture.  I thought having it medium rare would help with the tenderness but it didn’t help the case due to the leanness of the steaks. Lastly, it’s definitely a local dive steakhouse and the staff are really friendly.  It’s a quick spot to grab some food if you’re not a local.  However, I wouldn’t call it one of the ideal steakhouses to get quality beef.  I definitely think they should invest in a sous vide cooker to help with the taste of the steaks.
