Seryna Shinjuku is a Tokyo Shabu Shabu chain. This location is on the 52nd floor of the Sumitomo tower, which is about half a mile from the Shinjuku train station.

Seryna Shinjuku provides an amazing view of Tokyo with its wood tables and walls. The service was a bit lacking in they took away to come by and take my order. I think it had a lot to do with my outfit (i.e., shorts and a t-shirt). However, after the initial stare down, the service improved and the waitress came by frequently to check how I was doing with the meal.
Seryna Shinjuku serves a traditional Shabu Shabu and it’s definitely not cheap due to its usage of A5 Japanese Wagyu for the protein. By traditional, I mean a flavorless broth and it’s water pot to cook the beef. The broth usually comes down to preference. In the United States, flavor broth is very common due to the lack of quality beef use in Shabu Shabu.
Now, the food. Seryna Shinjuku serves sukiyaki too, but I came to Seryna Shinjuku for Shabu Shabu since I already had a sukiyaki experience scheduled at the Michelin Starred Imafuku.
- A5 Japanese Wagyu – The marbling on the thinly sliced A5 Japanese Wagyu speaks for itself. The clean light red color with extensive marbling providing a naturally rich and buttery flavor. It’s understandable why Seryna chooses to use water instead of a flavor broth to highlight the quality of the beef. The beef just melts in your mouth to the marbling and it’s gone after two bites due to its texture. Simply amazing.
A5 Japanese Wagyu - Goma & Ponzu Sauce – The thick goma sauce had a nice earthy taste to it and really complemented the Japanese Wagyu. The flavors didn’t overpower the wagyu, but enhance the quality of the beef. The ponzu sauce was really light in flavor. It had the right about of citrus flavors which really brought out the natural flavors the Japanese Wagyu.

Overall, Seryna Shinjuku provides a great high-end Shabu Shabu experience. The simplicity of the meal and the emphasis on high-end Japanese beef and ingredients were spectacular. The flavor broth could cause a lot of noise in shabu shabu sometimes and drown out the quality of the ingredients. I appreciate Seryna Shinjuku approach to shabu shabu.
